Curated by 57 experienced food writers, including restaurant critic of The Times, Giles Coren, collectively the guides feature just 1,250 restaurants.
The editorial team from the guide commented on the selection process:

We’ve had some amazing accolades over the years, but to be included in a worldwide guide to sustainable dining is really exciting.
